Thank you to all for the responses to our Spotlight's on You request for ideas! It's clear that many of you are extending Arianna's Nutrition Expedition™ lessons in fun and interesting ways. We want to thank Rina Di Re, Clara H. Carlson School, Elmont, N.Y. for sharing an activity that has parents thanking her for making their job a little easier.
When Di Re brought some snow peas into class for tasting, the children were so excited that she decided to "dig deeper," as she describes it. Here's a sampling of what she did, and recommends to other teachers:
Over several lessons, bring in vegetables that kids not only taste, but learn how to prepare, too. Starting with sweet peppers (yellow, green, red and orange), show students how to wash, and then cut them with plastic knives. "You'd be surprised how many kids don't know how to wash or prepare vegetables," says Di Re. Next, compare baby carrots and whole carrots, then move on to mushrooms and more. End the series by creating a platter with all the vegetables they tasted and low-fat yogurt dip they help to make. This is a great extension to Marcus's Big City Adventure, Activity 4, which teaches students that they need four Vegetable Group servings a day.
Make and taste yogurt parfaits, too, to extend the Arianna and the Combination Cookbook, Activity 6. Have students alternate a couple of tablespoons of low-fat vanilla yogurt with different berries in clear cups. Top with a sprinkle of granola and a drop of lemon curd for added flavor. Showcase their creations by delivering parfaits to other teachers.
